Our Client are recruiting for an experienced Sous Chef for this busy 4 Star Hotel in Co Kerry. The Sous Chef will be responsible for overseeing the kitchen operations and leading the kitchen team in the absence of theHead Chef. They will be tasked with ensuring the high quality preparation and presentation of all menu items across all outlets of the Hotel. Ensuring that correct procedures are adhered to by all members of the team in accordance with Haccp regulations. The Sous Chef will also coordinate the purchase of all food items ensuring they in keeping with the agreed budget.

Minimium Requirements

  • Culinary College Degree.
  • Previous Sous Chef experience in a high quality establishment leading a team.
  • Experience across all sections of the kitchen to include bar/restaurant and banqueting.
  • 2-3 year experience as a Sous Chef in a 4/5 star Hotel.
  • Haccp Level 2 minimum requirement.
  • Strong administration background relating to costings, rosters, payroll, ordering, and haccp is essential.
  • Proficient in IT systems.
  • Ability to work under pressure.
