Sous Chef required for a busy four star establishment in Sligo

Amazing opportunity for an experienced Sous Chef in a busy four star hotel.

The ideal candidate will possess the following:

  • Have a genuine passion to produce high quality food
  • Have the ability to run a very paced kitchen in the absence of the Head Chef
  • Have strong leadership skills and ability to train and manage staff
  • Have a keen interest in food production and menu planning
  • Have a thorough understanding of and commitment to HACCP and kitchen hygiene
  • Be able to develop and suggest ideas for potential new menu items
  • Easily work on own initiative or as part of a team
  • Have a strong work ethic and customer focus
Key Responsibilities:

  • Contribute to the production of food items in accordance with instructions from Executive Head Chef
  • Be familiar with the menu and with any "specials" of the day
  • Ensure all dishes are prepared in a timely fashion
  • Ensure high standards of Hotel are met
  • Avoid wastage and comply with portion control
  • Ensure HACCP compliance within the kitchen and at all times
  • Ensure the kitchen equipment is in working order; report any maintenance issues to the relevant manager.
  • Assist the Head chef with stock control, orders, etc.
  • Assist the head chef in all aspects of staff management, including training and development
